How Coffee Brewing Math Actually Works: The Core Concepts Behind Our Tools

Brew Ratio: The Foundation of Every Coffee Calculation

A brew ratio is simply the relationship between the weight of dry coffee grounds and the weight of water used to brew them. It is expressed as coffee:water, so a 1:15 ratio means 1 gram of coffee for every 15 grams of water. All ratios in specialty coffee are measured by weight, not volume, because coffee is not uniformly dense and measuring by volume (scoops, tablespoons) produces inconsistent results across grind sizes and roast levels.

The SCA Golden Cup Standard defines the ideal extraction range for drip coffee as 1.15% to 1.35% brew strength, which corresponds to a 1:16 to 1:18 brew ratio using a standard medium roast. Espresso operates on a completely different scale, typically 1:2, because the shorter contact time and pressurized extraction yield a much more concentrated beverage that is designed to be consumed in small amounts or used as a base for milk-based drinks.

Extraction Yield: Why the Ratio Alone Is Not Enough

Brew ratio tells you how much water you used relative to coffee. Extraction yield tells you how much of that coffee actually dissolved into the water. A coffee bean is roughly 30% soluble material by weight. The goal in specialty coffee is to extract between 18% and 22% of that soluble content, leaving behind the insoluble cellulose and oils that stay in the grounds.

Two coffees brewed at the same ratio can have completely different extraction yields based on grind size, water temperature, turbulence, and contact time. This is why dialing in espresso by ratio alone is not sufficient. You can hit a 1:2 output ratio and still be under-extracted if the shot ran too fast, or over-extracted if the grind was too fine and the shot channeled.

Water Chemistry: The Variable Most US Home Brewers Ignore

Water makes up more than 98% of a brewed cup of coffee. The mineral composition of that water is not neutral, it actively participates in extraction.
