How much brisket per person for a BBQ? +
Plan on 0.5 pounds of cooked brisket per person, or 1 pound of raw brisket per person since brisket loses roughly 40 to 50 percent of its weight during smoking. How do I scale a recipe for more people? +
Divide the number of servings you need by the original yield to get the scaling factor, then multiply every ingredient by that factor. A recipe for 4 scaled to 12 uses a factor of 3 (multiply every ingredient by 3). For baking, leavening agents like baking powder and yeast do not always scale linearly above a 2x factor. What is the correct coffee to water ratio? +
The Specialty Coffee Association of America (SCAA) Golden Ratio is 1 to 2 tablespoons of ground coffee per 6 ounces of water. In grams, that is 10 grams of coffee per 180ml of water. How do I convert cups to grams for baking? +
Grams per cup vary significantly by ingredient because different materials pack differently. All-purpose flour is about 120 to 125 grams per cup, granulated sugar is 200 grams per cup, butter is 227 grams per cup (one standard US stick), and rolled oats are about 90 grams per cup.
